Domaine Bernard Defaix, Chablis 1er Cru 'Côte de Lechet' 2022

Domaine Bernard Defaix was established by its namesake in 1959 with only a tiny 2ha of vineyard space. In 2004, Bernard's sons, Sylvian & Didier, took the reigns and have been running the vineyard & winery ever since. Today, the winery is spread of 27ha and encompasses some of Chablis' most prestigious vineyards. The Domaine is now totally organic certified, meaning what you see in your glass is an authentic expression of Chablis. 'Côte de Lechet' 2022 is the Domaine's Premier Cru Chablis, made from 100% Chardonnay located on the slopes of the village of Milly, on the right bank of the Serein. 2022 was a great year for Chablis and this wine is no exception: packed with gorgeous minerality thanks to the fossilised-limestone soils, it has notes of green apple, citrus, honey and stone. Medium-bodied with a vibrant acidity, this is a wine which is drinking well now but will age beautifully over the next 5-10 years too. Paired best with fish or poultry, with white butter or cream sauces.
